Place the sugar in a saucepan and just cover with water. Cook until the sugar melts. Off the heat, add the chocolate and mix. Add 8 egg yolks and the butter and stir well. Place in a bowl. Beat the egg whites until firm and fold them gently but thoroughly into the chocolate mixture. Butter a mold and fill it with the chocolate mousse. Refrigerate overnight. Before serving, unmold the mousse onto a serving plate. Decorate the edges with cat╒s tongue cookies.
